Lemon olives - 120G
The Profile: Radiant, sharp, and incrementally spicy. We use Cracked Green Olives (to allow the marinade to penetrate the pit) and toss them with Hand-Sliced Fresh Lemon and a fermented Lebanese Chili Paste.
The Experience: This is an "Acid-First" preserve. The Fresh Lemon provides a high, citrus note that wakes up the palate, while the Lebanese Olive Oil—known for its robust, peppery "green" throat hit—anchors the flavor. The Chili Paste doesn't overwhelm; it provides a warm, glowing background hum that lingers after the citrus fades.
