Reinvented Makdous - 120 G
The Profile: Savory, fermented, and intensely spicy. We source Baby Syrian Aubergines, salt-cure them to remove every drop of bitterness, and hand-stuff them with a blend of Toasted Walnuts, Smoked Garlic, and our Signature Shatta Paste.
The Experience: This is a multi-sensory preserve. The aubergine is buttery and soft, yielding to a crunchy, spicy walnut heart. The Shatta adds a bright, fermented acidity and a lingering chili heat that standard Makdous lacks. Submerged in cold-pressed oil, it develops a deep, complex "umami" over time.
Pairing Notes: Best served with Labneh and warm Pita, sliced over a Feta Salad, or eaten "village style" with a side of fresh mint and tea.
